Keep your bamboo cutting board for the Smart Oven flat and clean with a simple oiling and washing routine that prevents warping and knife marks.
Quick answer
Oil your bamboo cutting board monthly with food-grade mineral oil, wash it by hand with mild soap and warm water, and dry it flat to prevent warping. Store it on top of your Smart Oven only when the oven is off and cool.
Why bamboo needs a different care routine
Bamboo absorbs very little moisture and is harder than most cutting boards, so it resists knife marks and stains better than soft woods. But that density also means it can dry out and crack if left wet or exposed to direct heat. The Bamboo Cutting Board for the Smart Oven® is sized to sit on specific BOV models, so keeping it flat and true matters for both safety and fit.
Never put this board in the dishwasher or soak it in the sink. The heat and prolonged water exposure can strip the natural oils and cause the bamboo to swell, warp, or split along the grain. Hand washing takes under a minute and protects the board’s fit on your oven.
When to oil and when to skip it
New bamboo boards benefit from a light oiling before first use, and then monthly or whenever the surface looks dry and pale. Use food-grade mineral oil—not olive or vegetable oil, which can turn rancid. Apply a thin coat with a lint-free cloth, let it soak in for at least 20 minutes, then wipe off any excess. If the board still looks dry, repeat once.
Skip oiling if the board will be used immediately for cutting raw meat or if you plan to wash it with soap right after. Oil and soap don’t mix well; oil first, then wash and dry thoroughly before the next use.
Monthly bamboo board care steps
- Wash by hand after every use: Rinse the board with warm water and a drop of mild dish soap, then scrub both sides with a soft sponge. Do not soak it or leave it wet in the sink. Check for any rough spots or raised grain; if found, sand lightly with fine-grit sandpaper before oiling.
- Dry flat and completely: Pat the board dry with a clean towel and lay it flat on a drying rack or countertop to air-dry fully before storing. Never stand it upright to dry, as water can pool at the base and cause warping. Make sure both sides are dry to the touch before oiling or stacking on the oven.
- Oil monthly with mineral oil: Apply a thin, even coat of food-grade mineral oil to all surfaces—top, bottom, and edges—using a lint-free cloth. Let it absorb for 20–30 minutes, then buff off any excess with a dry cloth. If the board absorbs the oil quickly and looks dry, apply a second coat the same day.
- Store on a cool, dry oven: Place the board on top of your Smart Oven only when the oven is completely cool and turned off. Avoid storing it near a heat source or in direct sunlight. Never use the board as a trivet or place it over a hot burner; heat can warp bamboo permanently.
