Dough Not Mixing Evenly? Here's the Fix

If your dough isn't mixing evenly, the culprit is often the wrong mixer or attachment. Learn how to diagnose and fix the issue with Breville's Handy Mix Scraper.
Quick answer
Uneven mixing usually means your mixer struggles with thick dough or the wrong attachment. Switch to a scraper beater or adjust speed for even results.
Why dough mixing fails
Thick doughs like bread or pizza dough require more power and a beater that scrapes the bowl sides. Standard beaters leave unmixed flour at the edges, especially in small mixers. That's not a flaw—it's a design tradeoff for lighter tasks.
When to upgrade your mixer
If you frequently bake heavy doughs, a hand mixer with a scraper attachment can save time and frustration. The Breville Handy Mix Scraper uses Beater IQ technology to detect the attachment and adjust speed automatically, so you don't have to guess.
Diagnosis and fix
- Symptom: Dough has dry flour patches, uneven consistency, or one side is overmixed.
- Likely cause: The beater isn't reaching the bowl edges, or the mixer speed is too low for the dough's density.
- Corrective action: Stop the mixer, scrape down the bowl, then restart at a higher speed. If using a standard beater, consider a scraper attachment like the Handy Mix Scraper for better bowl contact. If dough still isn't even after scraping, the mixer may lack power for that batch size—switch to a stand mixer or reduce dough quantity.
- Stop or choose another option: If you've tried scraping and speed adjustments but dough remains uneven, the mixer isn't built for that dough. Use a heavy-duty stand mixer or a hand mixer with a scraper beater for thick recipes.
